Case study 01 · Micro bakery + nutrition

Kaz sold out her classes. Then she had to stop running on empty.

Summary

Kaz is a nutritionist in training who runs a micro bakery and teaches sourdough. When she first started working with me, she was messaging her old boss, trying to get her to sign up for a £50 offer, and wondering why everything felt so hard. Fast forward, and her classes sold out fast. The problem wasn’t sales. Every pound she earned needed her physically in the room, and it was burning her out.

1. How it started

She posted her first class in a local Facebook group, with no plan and no ads.

“It was like an accident. I put two classes up and they sold out within 48 hours. I kept adding and adding… Then I saw my bank account. It was like £8,000.”

2. Where she was stuck

“I don’t have a sales issue. I have a capacity issue.”

One post and a class would sell. But behind every one:

  • Three days of prep for each class
  • Cleaning up late at night once it was over
  • Young children at home and study on top of it all
  • No income unless she was physically there

If you’re reading this and nodding, this section is you.

3. Why her demand was so strong

Before building anything new, we got clear on what was already working:

  1. The nutritionist who bakes. She’s not just a baker. A few nutrition nuggets in each class made it feel worth far more than the price.
  2. A real micro bakery as proof. Most sourdough teachers don’t run one. Her fortnightly bakes are her competitive edge and her best content.
  3. An affordable luxury. When money’s tight, people still invest in a skill that’s good for their health.
  4. Her story, not ads. She shared her real story in free local groups, and a fifth to a third of students came back.

4. The shift: from time for money to an offer ecosystem

We mapped a pathway so people can buy from her every day, at every level, without her in the kitchen for each sale.

LevelOfferPrice
Entry15-minute recipe guide (7 dinners)£7
Low ticketHealthy weekly reset meal prep guide£17
Mid tierSourdough starter kit + video course£25–60
1:1Custom meal prep plan on Zoom£297
High ticket3 to 6 month nutrition transformation£3,000–5,000

Every lower level is a way in. Every higher level is a deeper transformation.

5. What her students say

“People love it. They don’t want to leave. People are hugging me.”
  • “You’re going to see so much of me.”
  • “When you’re qualified, you’ll be my nutritionist.”

6. The takeaway

“This has changed my life. That will change my lifestyle.”

If your demand is outgrowing your capacity, you don’t need more hours. You need a better model.
